Ingredients:
Basmati Rice -1 1/2 cup
Mint (Pudhina)-1/4 cup
Onion - 1 No
Ginger Garlic paste -2 tbsp
Green Chillies- 5 nos
Coconut milk -1 cup (optional)
Lime -1 (optional)
Vegetables(Carrots,beans,
peas ,cauliflowers) -1 cup
Salt -Acc to taste
Cinnamon -2 piece
Cloves - 2 Nos
Bay leaf -2 Nos
Butter/Ghee/Oil - 2 tbsp
water - 2 cups
Preparation :
(1) Soak The Basmati Rice in water for half an hour before
cooking. Wash & drain the rice.
(2)Cut the carrots,beans length wise...wash peas & cauli flower florets .
If you are using frozen vegetables, rinse in cold water and drain well.
(3)Wash and dry the mint.Make ginger garlic paste ready.
(4)In a rice cooker or in a pan take some butter/ghee/oil.
As it starts heating up add all whole garam masala and fry for a minute.
Add the Onions and fry for about 5 minutes or until the edges begin to turn brown.
(5)Now add Ginger garlic paste let it cook for a couple of minutes.Now add the mint leaves... and green chillies.Saute all the ingredients until it becomes tender and seperating oil from the dish .
(6)Add the vegetables & fry for couple more minutes.Add rice & salt.Fry it till all the rice is quoted with ghee & spices. Add the water & cover the lid.
(7)You can use coconut milk instead of water which will add richness to the pulao.In this recipe I have added two cups of water and added 1 cup of coconut milk which gives 3 cups of liquid for
1 1/2 cups of rice.Rice and liquid proportion should be 1:2 .
(8)If you are using pressure cooker ,use medium heat and wait for 2 whistle.After that remove from the stove and transfer the pulav to seperate pan..This will prevent the breaking of rice..Dont use spoon inbetween.
(9)If needed you can add lime juice ......Serve hot.....
(10)For vegetarians ,U can serve with Raitha (curd with onion)
For Non vegetarians who can serve with Mutton pepper fry.
Notes:
(1) You can add fried cashews to the pulao and garnish it.
(2) Cut the sweet bread into cubes and deep fry in ghee.This fried breads could also be used for garnishing.
